Eat in Week ~ Last Day:

Simone’s Lusciously Creamy Potato Kale Soup:                                  eat-in-week-food-008


1 cup Onion, chopped
1 cup Organic Leeks, thinly sliced
1/2 tsp Salt
4 cups Organic Vegetable Broth
4 cups Organic Red Potatoes, chopped
1/4 tsp Ground Fennel
3/4 cup Organic Celery, chopped
1/4 cup Dry White Wine
1/2 tsp Organic Dried Dill
2 tsps Dijon, preferably whole grain
1/4 cup Scallions, sliced
1 tsp Organic Dried Basil
1/2 cup Evaporated Milk (soy will work)
4 cups Organic Kale, shredded or coarsely chopped
1/4 tsp Organic ground pepper

1) Saute the onions, leeks and salt in 1/2 tsp of olive or canola oil for 5-7 minutes. Add the vegetable stock and bring to a boil. Add the potatoes, fennel, celery, wine and dill. Simmer for 20 minutes until the potatoes are tender. Strain out 1 cup of the potato mixture and set aside. 

2) Rinse the kale and add it to a 2-quart pot. Over low-medium heat gently wilt the kale.

3) Working in batches, puree the soup in a blender or food processor. Combine the pureed soup, the reserved potato mixture, evaporated milk, basil, Dijon, scallions, pepper and kale. Season to taste!
